Apples and Aged Sheep Cheese Carpaccio

  • 4 apples, washed and pat dry
  • 1 bunch of fresh basil leaves
  • 1 cup of arugula
  • 1 shallot
  • 2 ½ tablespoon olive oil
  • 1 tablespoon of apple cider vinegar
  • 3 ounces aged sheep’s milk cheese, sliced in small pieces
  • 4 teaspoons chopped walnuts
  • 2 tablespoons honey, slightly warmed up in the microwave
  • Salt and pepper to taste

    Peel and cut in half the apples. Remove cores and thinly slice.
    Place the basil and arugula in a mixing bowl.
    Mince the shallot and place in a small bowl. Add the olive oil, vinegar and season to taste. Mix and pour over the greens. Toss well.
    In an elongated serving platter, place the apples in a circle overlapping form. Top with the cheese, chopped walnuts, and drizzle the warm honey. Spread lengthwise and in the center the prepared greens. Serve immediately.
